OK Perry, you have my interest. My wife's palate favors the mild end of the spectrum, so what is a good way to introduce her to your pepper sauce?
The sauce is a wonderful compliment to starches. Asian food in particular pairs well. Put some on the rice dishes, noodles and soups. Believe it or not, it is wonderful on lemon or lime sorbet. Yes it is! It is an all new flavor experience, a true "Icey-Hot".
Now, a little guidance on the proper way to enjoy a pepper sauce.
1. Pour from the bottle to a small serving dish
2. Hold the dish to your nose and take notice of the fragrance. 50% of tasting is smelling.
3. Based off of the fragrance choose the part of your meal you think it would compliment best.
4. Less is more. And a small amount that allows yourself to adjust to the heat, you can always add more. Madame J tends to hit the back of the taste buds and gradulally picks up speed. Don't worry, the heat also subsides evenly.
