Our goal is to bring very select craft batches of pepper sauce to the mainstream every two years. Why two years? That’s because our process is meticulous. First, we locate a pepper that meets our criteria as being full flavored and has a heat profile that does not overpower the flavor of the pepper. Next, we import the seeds and spend six to eight months cultivating a batch for product development.
Once we have enough peppers, our chefs work their magic. ERANSEAN directs our chefs to be creative while minimizing the additives. What we mean by additives, is anything that adds another smell or flavor that is not from the pepper itself. When you try our sauce, you will smell the pepper and taste the pepper first. The pepper is always the star in our sauces.
Once we have a recipe we feel good about, we then make a few small batches to share with the public for the purpose of market analysis. We take the feedback we receive, make changes as recommended, and spend up to six to eight months finalizing the recipe. This includes the entire FDA testing and approval process. Once we have the approval, we then commission our farmers to move forward with planting and growing.
Right now, we are in the process of cultivating the very rare Aribibi Gusano Pepper from Bolivia. You will absolutely love the flavor, fragrance, color and heat of this pepper!
